chore: restructure environment variables

• Added support for SHOP_BINARY_PATHand SHOP_LICENSE_PATH
• Still supports ICC_COMMAND_PATH but with a deprecation warning
• Added more checks and exceptions to make it easier for users to debug binary path and license path errors
